Mixolab is a new device from Chopin Mixolab, France and is used to test the quality parameters for various flours, not only Wheat flour. It can be used to test even mixture of flours. Mixolab is being used to test the Water Absorption, the Gluten Strength, Starch Pasting Quality, Amlolyse and Retro gradation. This system has both the ICC and AACC accreditions.
This system is also supplied with a "Mixolab Profiler". This feature allows the Scientist / Chemist to see whether their sample is equivalent to that of another in characteristics. The biggest advantage of this system is that the test is being conducted on Dough.
